Grain doesn't make you stupid, it makes you smart!
Why the theses of the book “Dumm wie Brot” do not stand up to any scientific examination ...
The thesis that bread makes stupid will sound just as absurd to you as it is. But there is actually a doctor in the USA who represents them. The man's name is David Perlmutter and he wrote a book called “Brain Grain” that made it to the top of the bestseller lists in the United States. The German offshoot with the title “Dumm wie Brot” - unfortunately also a bestseller - is a slap in the face of all those people who like to eat bread, rice or noodles, occasionally drink juice and treat themselves to a beer every now and then. Are you one of them, dear bread lover? Then you would do poorly on the test questions in said book, with which you can determine the risk of "massive mental degradation", and you would have to read that you risk "serious neurological problems".
With his theses, the author even goes beyond other preachers on a low-carbohydrate diet. Now, grains such as wheat not only make you fat, they even damage the brain! His formulations on this are drastic: "Modern grain decomposes the brain" and the wheat protein gluten, as a "silent virus", could cause permanent damage "without our knowing about it". With his daring thesis, the author makes every effort to spread fear and horror: the high-carbohydrate, low-fat diet recommended in Western countries is harmful. They dramatically increase the risk of diseases such as migraines, depression, ADHD and even Alzheimer's. His self-test questions in the book are formulated in such a way that almost every lover of bread becomes a high-risk candidate and reads on in fear. Fear is extremely unhealthy. In this respect, it must be feared that the book in question damages the brain more than the “bad” wheat.
At a time when people are already so unsettled due to many scary reports that they regard food as a potential health risk, David Perlmutter also hits his readers in the marrow, especially since he comes in a scientific guise and cites well-known scientists on almost every page. On closer inspection, however, one recognizes the “hair-raising mess” of Perlmutter's argumentation, as a well-researched article in ZEIT sums up perfectly: “He mixes well-known truths with speculations, selects studies, dramatizes results, draws wrong conclusions and decorates all of this Anecdotes from his patients who were miraculously cured after a gluten-free diet. " As a result, ZEIT also attests to the book “false generalizations” and notes that the author withholds “meaningful scientific findings in favor of his simple truths”.
Professor Dr. Detlef Schuppan, who is considered a leading researcher in the field of wheat intolerance in the USA and Germany, has a very clear opinion on this: “That is why pseudoscientific books on the subject of wheat are not recommended. William Davis, the author of "Weizenwampe", is a cardiologist and writes on metabolic processes and in particular the gastrointestinal tract. Another bestselling author is a neurologist, David Perlmutter, who makes "steep" hypotheses about the causal role of wheat in so-called neurodegenerative diseases (e.g. Alzheimer's or dementia). However, neither of the authors has so far been able to scientifically substantiate their theories. (...) Wheat is probably not harmful to over 90 percent of the population. "
The scandal books on wheat always build on the placebo effect. Because if you are afraid after reading that bread or pasta would harm you, you could actually get fears or headaches if you eat them. However, it could be even more unhealthy for those readers who follow Perlmutter's diet suggestions. Because one of the foods that you can "eat without hesitation" includes beef. It has been scientifically proven that the daily intake of 250 grams of red meat increases the risk of cancer or cardiac death by around a quarter compared to people who only eat 150 grams of red meat per day.
You, dear bread lover, are advised again not to follow every advice and not to change your diet without serious illness. In the opinion of all serious nutritionists, the principle of “balanced mixed food” with a high proportion of grains is and will remain the best form of nutrition for you.
